Hi there, I’m Erica — the baker behind Palm & Proof. I’m based in Fort Lauderdale, where I bake small-batch sourdough and handmade baked goods using simple ingredients and traditional methods.
My love for baking started at home, experimenting in the kitchen and learning how time, fermentation, and patience can turn something simple into something meaningful. What began as baking for family and friends slowly grew into Palm & Proof, a bakery rooted in intention, care, and community.
My Story
Palm & Proof began with a love for working with my hands and a curiosity about the sourdough process. I was drawn to the idea of slowing down and letting fermentation do the work, rather than rushing the outcome. Baking became a way for me to be present, creative, and connected.
Over time, sharing bread with others became just as important as making it. Palm & Proof grew naturally from that mindset — from home bakes to local deliveries and weekend markets. Every loaf is mixed, shaped, and baked by hand in small batches, with attention to detail and respect for the process.
Palm & Proof is about honest bread, made thoughtfully, and shared locally.
